"Things I Learned While I Was Sick"

#1. Fever equals the best weight loss plan.

I had hovered at 209 for months. Beats 325 a year and a half ago. But lately, and especially during CWS, I put on six pounds. Eating habits went to hell, and I felt it too. So after CWS, I went back to Healthy Choice for a week. Lost about 3 pounds. Then I got sick. Fever robbed me of any desire to eat at all. So this morning I was shocked to see something I never thought I would see again. A weight under 200. I was 199.6. I know a few of it will come back as I get back to normal.

#2 Fever is NOT a good diet plan.

I need to get back to doing what I love, which is trying new stuff in the kitchen at home. Trying new recipes and making them my own with modification was a hobby of mine, and lead to an eventual career change. Somehow, I left this year rob me of that fun. Time to return to things that invigorate and revitalize me.

#3 I spend too much time involved in work.

I need a better balance. You are right Ken!

#4 I worry too much about neglecting the other half.

"I've been around your foodservice crazy schedule for over six years now. It is not a problem for me. I have never complained. I do not know why you feel you are neglecting me, or need to compensate by robbing your own interests to have "us time". Get rid of the self imposed guilt and do what makes you happy." Hmmmm...why do I tend to worry over others happiness before my own?

I bought the Halloween candy yesterday and last night after dinner I wanted to open that big bag and have me a piece. haha "a piece" who am I kidding? The bag (that I put in the garage) was calling out "graygooooooosie" and I was getting weaker by the second. You see, I have a history of not just eating one or two pieces, oh no.

So, I tried to manipulate Mr. graygoosie and make it HIS idea. I coyly mentioned "oh, I bought the Halloween candy today". He immediately replied "I don't want to know about it, no no no. Nope don't tell me, I can't get it started" etc.

So I sat there, contemplating my next move.

Then I remembered the group! All of you! I thought about all of you in the Healthy Life & Style group. I drew upon the inspiration and strength I receive each day from YOU. yes YOU.

So, I said to Mr. G "how about some fruit?" and with his blue green eyes he smiled and said that sounded great. The craving for that bag of trouble disappeared with the sweet pineapple and strawberry we shared with one fork. And the Chamomile Spearmint tea was the perfect ending to a successful eve of the eve of Halloween.

I had to put that as my title. We were having a conversation yesterday about how grapes are the manliest fruit. Just roll with it.

After a week of eating pizza, convience store snacks and drive through food I vowed I have to start eating better. For the most part I'm not too hard on myself about my diet. I will be the first to admit my diet is crap. I'm not ever really concerned about gaining weight necessarily but I have passed up a slice of pizza instead of eating SOMETHING because I think "Oh that is so bad for you." Yes well, something is better than nothing. I'm much better about it these days. I went and bought fruit and healthy stuff to make meals with. My food tends to go bad since I have no idea how to cook meals with decent sized meals for leftovers. Or the stuff goes bad before I have a chance to make it. I'm learning =) I love to cook but most of the time it's just easier to go get a sandwich from the Nugget and call it a day...

And I'm not gonna lie, I rushed on this photo. I have a great photo to post up for you guys. I have a feeling you'll like it ;)

I originally planned on making "Chipotle Black Bean Soup" from the recipe section of the Whole Foods website, but when I read the lackluster reviews (after I bought all the ingredients) I decided to make a few changes. So this is a tweaked version of the Whole Foods recipe and its great, spicy, but not melting my face, flavorful, and not at all watery.

2 cups dried black beans soaked for over 24 hours
1 diced red onion
1 diced red pepper
1 diced green pepper
2 cloves garlic smooshed and chopped
olive oil
1 tablespoon oregano
1 tablespoon cumin
A few shakes of salt from the box(as much as you want really)
1 can of chipotle peppers in adobo sauce
8oz can of diced tomatoes (or more)
8 cups water
1 bunch cilantro
1 bunch green onions
A few fresh chive (if you have them)
A few splashes of OJ
Tofutti Sour Supreme

Saute onions. peppers and garlic in a decent sized soup pot until they are soft, add the seasoning and saute a little more. Add beans, about 3 of the canned chipotle peppers with some of the adobo sauce, set aside the rest. (do not use the whole can even if you like really spicy food!!! It will become inedible)

Add water and bring to a boil for a few minutes. Simmer for a few hours, I'm pretty sure you can't over simmer. Chop the cilantro, chives, and green onions and stir into the soup.

Here's the weird part... The beans did not break down and make a thick soup, so I took about half the soup and put it into the food processor with the canned tomatoes and pulsed it a few times. Then I added the blend back to the soup pot, added the OJ and stirred while simmering a bit more.

The result is a thick, spicy, filling bean soup...a lot of soup. Add a dolop of sour supreme and sprinkle some chives and green onions to serve.

Serves 8, 3 points per generous cup

2 chipotle chiles in adobo sauce, drained and minced
2 Tbs. olive oil
2 Tbs. ground cumin
1 large onion, finely chopped (1 1/2 cups)
1 medium red bell pepper, diced (1 cup)
5 cloves garlic, minced (5 tsp.)
2 14-oz. cans black beans, rinsed and drained
24 oz. gluten-free dark beer
1 14-oz. can diced tomatoes
1 cup fresh or frozen corn

Heat oil in 3-qt. pot over medium heat. Add chipotles and cumin; season with salt, if desired. Cook 1 minute, or until fragrant. Stir in onion, bell pepper, and garlic. Saute 5 to 7 minutes, or until vegetables are soft. Stir in beans, beer, tomatoes, and corn. Bring chili to a boil. Reduce heat to medium-low, and simmer, uncovered, 45 minutes, or until thick.

Holy cow, where did the weekend go? Well, since it was a weekend, I decided to actually get a shot of one of the kids into the 365. Cyn tagged me to share 8 quirky things about me so here goes:

1. I love cereal. Like, I could live on it. Fiber, protein, calcium and low fat - all in a bowl of tasty goodness. My pantry could rival Jerry Seinfeld's. My current favorites - Product 19 and Frosted Mini Wheats.

2. Speaking of food, I have an aversion to creamy white foods - mayo, sour cream, yogurt. I can't even look at them. I make an exception for alfredo sauce.

3. I am terrible car passenger. Driving as a passenger in a car for more than 2.5 hours is torture for me (and anyone unfortunate enough to be with me).

4. I think The Wire was the best show ever. If you have never seen it go and put it on your Netflix list. Do it now. I'll wait.

5. I love the Pioneer Woman. She almost makes me want to live on a ranch just without all the cows and dirt and sensible shoes.

6. I go to the gym once a week - on Sunday. It's the only day I've figured out how to fit it in.

7. I'm always cold. If it were up to me the heat would always be on roasting.

8. I'm a terrible housekeeper. I so need a maid.
